Pizza
Here is a quick and easy pizza which I developed from the idea of using oat bran instead of all white flour to make a pizza. The quantity of flour can be adjusted to suit whether you desire a thin pizza base, or a thicker crust.
Ingredients:
Base
1 cup oat bran or rice flour
1 cup 5 grain flakes flour
1 ½ cups self-raising flour
1 egg
250ml skim milk or water
Olive oil
Topping
Tomato paste
1 cup bacon pieces
¼ zucchini
½ red capsicum
1 cup thinly sliced onion
10 sliced olives
1 large tomato
Chopped parsley, black pepper
2 cups crumbled Feta cheese or
2 cups grated Parmesan cheese
Method:
Lightly spray a deep tray or casserole dish with the olive oil
Combine the base ingredients and shape onto the dish
Thinly slice the vegetables and put onto the base. Sprinkle
with cheese.
Bake in a 200 degree oven for 20 minutes
Serve with a green salad
Tip: Oat bran flour can be ground in a coffee grinder and
combined with ground 5 grain flour to make a crispy base.
