I started making these patties after reading the health benefits of oat bran flour and lowering cholesterol, and found that the oat bran gives a delicious taste and adds to the texture. They are also easy to make. The children could have a go at making these.

Ingredients:
1 415 grams tin salmon
1 egg
¾ cup oat bran flour (Health Food store)
1 tablespoon brown rice or wholemeal flour
½ cup tinned lentils or muesli (optional or use more flour)
1 medium onion finely chopped or grated
1 tablespoon of mixed herbs, parsley, oregano
Black pepper, chilli powder and coriander powder (optional)
Olive oil to mix, if needed
Method:
Combine all the ingredients in a large bowl and shape into patties
Fry patties in a lightly greased pan on a moderate heat for 10 minutes,
then turn and cook until set
Serve immediately with a drop of tomato sauce and a fresh green salad
Tip: Keep the heat moderate so the patties set in the middle and take your time
while they are cooking to prepare the green salad.
